Soup is a popular dish in the winter months, warming to the body and filling. However, store bought cans of soup are high in sodium and typically not very satisfying. For a pot of soup that is healthy as well as tasty, go with red lentils, which are quick to cook but high in protein. They are also more economical compared to meat, while filling and nutritious.
Saute 1 red onion, 4 carrots and 2 cloves of garlic—all of which should be chopped—in a tablespoon of olive oil in a soup pot until translucent. Add 6 minced leaves of sage and cook for 30 seconds. Pour in 1 quart of vegetable broth, 1 ½ cups red lentils and 2 teaspoons ground cumin. Stir well and cook for 15 to 20 minutes, or until the lentils are softened. To serve, sprinkle a pinch of freshly minced sage over each serving. Add crumbled bacon if desired for an extra tasty dish.
