Summer Recipe: Homemade Falafel Wrap!

Simple? Check. Easy? Check. Healthy?  Check. It's time to check out this homemade falafel wrap!  

Summer is right around the corner in Renton, Washington, and many are looking for healthy recipes to inspire their season. Salads are an obvious choice: they're healthy, quick to make, and can be full of seasonal veggies. Despite this, salads can get really old, really quickly.If you've had enough lettuce to feed a sanctuary of bunnies, it's time to make a different seasonal dish! Check out this summer-favorite - falafel wrap!Ingredients:
  • 8 oz dried chickpeas (garbanzo beans)
  • 1 onion - diced
  • 1 clove garlic - minced
  • 1 tsp finely chopped fresh flat leaf parsley
  • 2 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp ground paprika
  • 1 tsp ground cayenne
  • 1 tsp sesame seeds
  • 1 tsp salt
  • 6 tsp olive oil, for frying
  • Tortilla or wrap bread
  • Hummus
  • Veggies (e.g. cucumber, tomato)
Directions:
  1. The day before you make the falafel, put the dried chickpeas in a large bowl and cover with water, then leave and soak overnight.
  2. The next day, drain and rinse chickpeas, then add them to a food processor or blender with parsley, garlic, onion, coriander, paprika, cayenne, sesame seeds, cumin, and salt.  Blend until you get a thick paste.
  3. Heat 3 tablespoons of olive oil in a large frying pan over medium heat.
  4. Form balls from spoonfuls of the mixture (about 1 heaped tablespoon each) and flatten slightly with the palm of your hand (dampen your hands first to help prevent sticking).
  5. Fry half the patties (about 9) for 4 minutes on each side until crisp and golden.
  6. Repeat the process with the remaining olive oil and falafel mixture.
Take your favorite tortilla or wrap bread, add a couple of tablespoons of hummus, then add 3 ' 4 pieces of falafel.  If you want, add chopped cucumber and tomato!
