Refreshing End-of-Summer Recipe: Saucy Sausage-Stuffed Squash

Here is one refreshing recipe that you and everyone else are sure to enjoy. The saucy sausage-stuffed squash only takes 10 minutes to prep and a total of 15 minutes to prepare.Ingredients
  • 4 medium summer squash halved lengthwise (yellow, zucchini or a combination)
  • 12 ounces of Italian pork sausages with the casing removed
  • 1 can diced tomatoes in juice with roasted pepper, not drained
Cooking DirectionsScoop out the flesh from the squash for a ΒΌ inch thick shell. Then dice the flesh.In a large, nonstick skillet, cook the diced squash and sausage. Cook until browned or for 5 minutes, breaking it up with a spoon. Stir tomatoes and mixture in a bowl.In a skillet, cut side down, place the squash halves. Include 2 tablespoons of water, cover, and cook for two minutes. Then turn them over and cook an additional 2 minutes covered.
